I made this and it was delicious! I cooked it for a lot longer than recipe says – about 9-10 hours. I am not a meat lover, but I’m trying to eat more because I need more protein. I was surprised at how much I loved this. I kept going back to the fridge to eat the leftovers – COLD.

Rendered fat is what creates the sense of moisture NOT steam. Slow smoked or indirect is the only way to achieve this. If you doubt me try this recipe then go get some brisket from any BBQ joint. Worlds apart!
